Las Americas will certainly be the most convenient since it is just across the border. I've never been there, so I can't say whether it is good or not. see the first link for a list of their shops.

Horton Plaza is in downtown San Diego, and you will probably have to pay for parking if you drive - but most stores will validate your parking. Horton Plaza has lots of shops but the layout can be a little confusing if you don't know your way around. The food court is on the top level, and there are also some nicer restaurants up there as well. See the second link for their website to see which stores they have.

Mission Valley Center has a more conventional layout, and a good variety of stores. (third link) Like someone else mentioned, it is a popular teen hangout, since there is a big movie theater and quite a few teen-oriented stores. Around Mission Valley are a few other strip malls and commercial areas for other stores that might be interesting to you - Old Navy, Best Buy, Borders, etc. It's a bit further away from the border than the other two.

Near Mission Valley Center is Fashion Valley, which also has a lot of stores. See the 4th link.

Both Mission Valley Center and Fashion Valley are also on the trolley line.

Personally, i think mall stuff probably costs the same at all malls, but Las Americas is supposed to have outlet shopping, so it might be cheaper. There is also good outlet shopping at Viejas (east of san diego) and Carlsbad (north of san diego).
References :
http://www.lasamericas.com/eng/index.html

Forget all those malls and go to Fashion Valley. Fashion Valley has all stores you need with the widest selection.

Mission Valley is over run my teens. The stores pretty cater to that demographic. All the stores are low class.
References :
Las Americas is not that much more than the regular malls. Next to Mission Valley is Fashion Valley which I like better. Overall Horton Plaxa is beautiful and has a lot of the stores that the other malls have.
References :
I just checked out Las Americas which is supposed to be an outlet mall. They do have a Nieman Marcus outlet which does have discounted prices over what you would expect at regular department store prices, but no big savings over what you could get the same item at elsewhere. There is other stores, like Mikasa which has a clearance center in the back where the real discounts are, but you could also go to the Mission Valley Mikasa Outlet and find better overall prices. I did find really deeply discounted items at the Body Works over what I pay for the same items at the mall. There is also a perfumery that has fairly good prices compared to the department stores.

The place is huge, so expect to either move your car or walk a lot to get through the whole thing. The traffic gets really bad after 2Pm, if you are heading northbound. But, I would go to TJ first, then to Las Americas because you probably will find a lot of the items there cheaper than at the mall. Overall, Horton Plaza is the nicest shopping experience for its location, not prices. And, you will find the prices at Mission Valley higher than Las Americas as well. Have fun shopping!
References :
I like Horton Plaza, it is a nice place to shop but quite pricey, because they cater to the tourists, also if you have time do check out Mission Valley very nice stores.
